Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 2 ¼ cups granulated sugar
  • ⅔ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • ¾ cup buttermilk
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 cup hot water
  • 18 oz dark chocolate
  • 2 ¼ cups heavy cream

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, oil, eggs, and hot water; mix together until combined.
  4. Gradually add the wet ingredients to the dry ingredients and mix briefly until smooth.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean. Allow the cakes to cool.
  6. To make the ganache, heat heavy cream in a saucepan until simmering. Pour it over chopped dark chocolate, and let sit for 5 minutes before stirring until smooth.
  7. Let the ganache set at room temperature for 2-3 hours until thickened.
  8. Once cooled, layer the cakes with ganache in between and frost the top and sides with the remaining ganache. Decorate as desired, and enjoy!
