- Preheat your oven to 350°F (175°C) and prepare two 9-inch cake pans with cooking spray.
- In a large bowl, beat together the softened butter and sugar until light and fluffy.
- Add the eggs, vanilla extract, baking powder, and salt to the mixture and mix until combined.
- Gradually add the flour and milk, mixing until just combined.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
- For the pastry cream, whisk together sugar, cornstarch, and salt in a medium saucepan. Gradually whisk in the half-and-half and egg yolks.
- Cook the mixture over medium heat, whisking constantly, until it thickens. Remove from heat and add in vanilla and butter. Cool before using.
- To make the ganache, heat the heavy cream until simmering and pour over the chopped chocolate, stirring until smooth. Add corn syrup for sheen.
- Once the cakes are cool, place one layer on a cake plate and spread with pastry cream. Top with the second layer, and pour ganache over the top, allowing it to drip down the sides.
- Chill the assembled cake for at least two hours before slicing and serving!
