Ingredients
  

  • 1 cup (226g) unsalted butter, softened
  • 1 and 3/4 cups (350g) granulated sugar
  • 1 large egg
  • 2 large egg yolks
  • 4 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 ¼ cups (400g) all-purpose flour
  • 2 cups (240g) powdered sugar
  • 2 tablespoons milk or cream
  • Optional: rainbow sprinkles for topping

Method
 

  1. Preheat oven to 350°F (180°C). Grease and line a 12-inch round cake pan with parchment paper. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and egg yolks, followed by the vanilla and almond extracts, mixing until well combined.
  4. In a separate bowl, whisk together the baking powder, baking soda, salt, and flour until well incorporated. Gradually add the dry ingredients to the wet mixture, mixing until combined.
  5. Spread the cookie dough evenly in the prepared pan, smoothing the top with a spatula.
  6. Bake for 18-20 minutes until light golden brown around the edges. Allow to cool completely in the pan on a wire rack.
  7. For the frosting, beat the softened butter until light and creamy. Gradually add powdered sugar, mixing thoroughly, then add milk or cream and beat until fluffy.
  8. Spread the frosting evenly over the cooled cake and decorate with sprinkles.
