Ingredients
  

  • 1 and 2/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 24 ounces candy melts or white chocolate
  • 1 and 3/4 cups confectioners’ sugar
  • 2–3 teaspoons heavy cream
  • sprinkles

Method
 

  1. Preheat the oven to 350°F (177°C) and grease a 9-inch springform pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. Beat butter and sugar in a large bowl until creamy. Add egg and vanilla, mixing well.
  3. Combine dry ingredients with milk and mix until just combined. Spread the batter into the prepared pan and bake for 30 to 36 minutes, or until a toothpick comes out clean. Cool completely.
  4. Make frosting by beating softened butter and confectioners' sugar, then add heavy cream and vanilla. Mix until fluffy.
  5. Crumble the cooled cake into a bowl and add the frosting, mixing until combined. Roll into 1-inch balls and place on a lined baking sheet. Refrigerate for 2 hours.
  6. Melt candy melts in the microwave. Dip the end of a lollipop stick in the coating and insert into a cake ball. Dip the ball into the melted chocolate until coated, and let excess drip off.
  7. Decorate with sprinkles and insert upright in a Styrofoam block. Allow to set before serving.
