Method
- Preheat the oven to 350°F (177°C) and grease a 9-inch springform pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. Beat butter and sugar in a large bowl until creamy. Add egg and vanilla, mixing well.
- Combine dry ingredients with milk and mix until just combined. Spread the batter into the prepared pan and bake for 30 to 36 minutes, or until a toothpick comes out clean. Cool completely.
- Make frosting by beating softened butter and confectioners' sugar, then add heavy cream and vanilla. Mix until fluffy.
- Crumble the cooled cake into a bowl and add the frosting, mixing until combined. Roll into 1-inch balls and place on a lined baking sheet. Refrigerate for 2 hours.
- Melt candy melts in the microwave. Dip the end of a lollipop stick in the coating and insert into a cake ball. Dip the ball into the melted chocolate until coated, and let excess drip off.
- Decorate with sprinkles and insert upright in a Styrofoam block. Allow to set before serving.
