  • 9 tablespoons unsalted butter (softened)
  • 3 cups granulated sugar
  • 1 cup vegetable oil
  • 4 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 4 ½ teaspoons baking powder
  • 1 ½ teaspoons salt
  • 1 ½ cups milk
  • 6 large egg whites (room temperature)
  • ¾ cup rainbow sprinkles
  • 1 lb unsalted butter (softened to room temperature)
  • 6 cups powdered sugar
  • 6 tablespoons heavy cream
  • 2 teaspoons vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a stand mixer, beat the softened butter until creamy. Gradually add sugar and oil, mixing until well combined.
  3. Stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Alternately add the flour mixture and the milk to the butter mixture, starting and ending with the flour. Mix until just combined.
  6. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold into the batter along with the sprinkles.
  7. Divide the batter evenly into the prepared pans. Bake for 35-40 minutes until a toothpick comes out clean.
  8. Allow cooling for 15 minutes, then turn the cakes out onto a rack to cool completely.
  9. For the frosting, beat unsalted butter until creamy, then gradually add powdered sugar. Mix in heavy cream and vanilla until fluffy.
  10. Level the cakes if needed. Frost between the layers and cover the top and sides of the cake.
  11. Decorate with additional sprinkles as desired. Serve and enjoy!
