  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 medium ripe bananas, mashed
  • 3/4 cup plain Greek yogurt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp melted coconut oil

Method
 

  1. Preheat your oven to 350°F (175°C). Grease two 4-inch or 6-inch mini cake pans with parchment paper.
  2. In a medium bowl, whisk together the oat flour, all-purpose flour, baking powder, baking soda, and salt.
  3. In a large bowl, combine the mashed bananas, Greek yogurt, eggs, vanilla, and melted coconut oil. Whisk until smooth.
  4. Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix!
  5. Divide the batter evenly between the pans.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. Frost as desired with a healthy frosting or serve plain with fresh fruit.
