Ingredients
  

  • 1 and 2/3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup whole milk
  • 7 tablespoons unsalted butter, softened
  • 1 and 3/4 cups confectioners' sugar
  • 2-3 teaspoons heavy cream
  • 1 teaspoon vanilla extract
  • 24 ounces candy melts
  • sprinkles

Method
 

  1. Preheat the oven to 350°F (177°C) and grease a 9-inch springform pan.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl. In a large bowl, cream butter and sugar together, then add the egg and vanilla, beating well.
  3. Combine dry ingredients with milk in the large bowl, mixing until smooth. Pour into the prepared pan and bake for 30-36 minutes, until a toothpick comes out clean. Let it cool completely.
  4. Beat the softened butter with confectioners' sugar, heavy cream, and vanilla until creamy. Crumble the cooled cake into the frosting and mix to combine.
  5. Roll mixture into 1-inch balls and refrigerate to set.
  6. Melt candy melts in the microwave or a double boiler. Dip the end of lollipop sticks into the melted chocolate, then insert them into the cake balls.
  7. Dip the cake balls in the melted chocolate, allow excess to drip off, and decorate with sprinkles. Place upright to set.
  8. Store cake pops in the refrigerator for up to a week.
