  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 cup whole milk
  • 2 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 24 ounces candy melts or chocolate bars
  • Sprinkles for decoration

Method
 

  1. Preheat oven to 350°F (177°C). Grease a springform pan.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream the butter and sugar in a large bowl. Add egg and vanilla, then mix.
  4. Incorporate the dry ingredients with milk to form a batter.
  5. Spread batter in pan and bake for 30-36 minutes until a toothpick comes out clean.
  6. Cool the cake completely, then crumble it into a bowl.
  7. Beat confectioners' sugar, softened butter, and vanilla to create frosting, then mix with the crumbled cake.
  8. Roll the mixture into balls and place on a lined baking sheet. Chill for 2 hours.
  9. Melt candy melts or chocolate. Dip lollipop sticks into chocolate and insert into each cake pop.
  10. Dip cake pops into the melted chocolate and allow excess chocolate to drip off. Decorate with sprinkles.
  11. Place pops upright in a foam block to set.
  12. Store in the refrigerator for up to a week.
