Method
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch cake pans and set aside.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, buttermilk, oil, and vanilla to the dry ingredients; beat on medium speed for 2 minutes. Stir in the hot water or coffee until combined.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cakes to cool in the pans for 10 minutes; remove to wire racks to cool completely.
- For the mousse, melt chocolate chips in a double boiler or microwave.
- Whip 1 cup of heavy cream until soft peaks form; fold in the melted chocolate mixture until combined. Chill until set.
- Once cooled, level the cakes and place one layer on a serving plate. Spread half of the mousse over it. Layer with the second cake, then top with the remaining mousse.
- For the frosting, whip remaining heavy cream with powdered sugar until stiff peaks form. Frost the top and sides of the cake.
- Garnish with chocolate shavings or berries as desired. Refrigerate until ready to serve.
