Method
- Prepare your vanilla cake according to the recipe or box instructions. Allow it to cool completely, then slice horizontally in half and freeze.
- A day before serving, assemble the cake in a 9-inch springform pan lined with plastic wrap. Spray with cooking spray and freeze for at least an hour.
- Let each pint of ice cream sit at room temperature for about 15 minutes to soften. Spread the chocolate ice cream evenly over the first layer of cake and freeze for at least an hour.
- Repeat with the strawberry and vanilla ice cream layers, allowing each to freeze before adding the next. Finish with the second half of the cake.
- Wrap the top with plastic wrap and freeze until firm, preferably overnight.
- On the day of serving, whip the heavy cream and powdered sugar until stiff peaks form. Frost the cake with the whipped cream and decorate with sprinkles, if desired. Freeze for another hour before serving.
- Let the cake sit at room temperature for about 30 minutes before cutting for easier slicing.
