Ingredients
  

  • 1/4 cup (56g) salted butter (room temperature)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) sour cream (room temperature)
  • 1 tsp vanilla extract
  • 3 large eggs (room temperature)
  • 1 3/4 cups (220g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 cup (120ml) milk (room temperature)
  • 8 oz (227g) cream cheese (room temperature)
  • 1 1/2 cups (360ml) heavy whipping cream
  • 1 1/4 cups (215g) semi-sweet chocolate chips
  • 1 package (3.4 oz) instant vanilla pudding
  • 1/3 cup (78g) sugar (for topping)
  • 1/4 cup corn syrup (for ganache)

Method
 

  1. Preheat oven to 350°F (176°C). Grease a 9-inch springform pan.
  2. In a bowl, cream together butter and sugar until light and fluffy.
  3. Beat in the sour cream and vanilla extract until smooth.
  4. Add eggs one at a time, mixing well each time.
  5. In another bowl, combine flour, baking powder, and milk, then mix into the wet ingredients.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. While cooling, beat cream cheese until smooth. Add sugar and pudding mix, mixing until combined.
  8. In a separate bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  9. Once the cake has cooled, layer cheesecake mixture on top and refrigerate for at least 4 hours, or overnight.
  10. For ganache, heat heavy cream and pour over chocolate chips until melted and smooth.
  11. Pour the ganache over the chilled cheesecake layer, spreading evenly. Chill again until firm.
  12. Slice and serve chilled, enjoying the layers!
