  • 2 ½ cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 large egg whites
  • 1 tablespoon vanilla extract
  • ½ teaspoon almond extract
  • ⅓ cup plain Greek yogurt
  • 1 cup milk
  • 8 ounces cream cheese
  • ½ cup unsalted butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups sliced strawberries
  • 1 ½ cups blueberries
  • 1 ½ cups raspberries
  • fresh mint for topping

Method
 

  1. Preheat the oven to 350°F (175°C). Spray a 9x13 inch baking sheet with nonstick baking spray.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a mixer bowl, beat together the sugar and oil until well combined. Incorporate whole eggs and egg whites, followed by vanilla and almond extracts, and Greek yogurt.
  4. Gradually mix in the dry ingredients alternately with the milk until fully combined.
  5. Pour the batter into the prepared baking dish and bake for 25 to 32 minutes, or until a toothpick inserted comes out clean. Let cool completely.
  6. For frosting, beat the cream cheese and butter until creamy, adding powdered sugar and vanilla till smooth.
  7. Frost the cooled cake generously and top with fresh strawberries, blueberries, and raspberries. Garnish with fresh mint leaves before serving.
